What is your idea of a dream project? Dream projects come in so many forms for me. Sometimes it the people I get to work with, other times it the style of cake I get to create, but in the end, as long as I make my clients happy, I’m happy.
What has been your favorite wedding that you have worked, or attended?
I have three favorite weddings! While they were all very different from each other they all shared two common elements. First, they all had hanging cakes which required me to stay on site for the event in order to take the cake down for serving purposes and second, I was able to see each couples’ reaction both when they first saw the cake and when they cut the cake. It’s pretty rare that I get to see my couples on the wedding day due to timing so it’s extremely special for me to see their cake cutting moment in person.
What does your morning routine look like?
This truly depends on the day!Typically, I am in the office early in the morning responding to emails, phone calls, planning the baking schedule, sketching cakes, etc. By midweek, I head straight to the kitchen to make and decorate cakes.
What are some of your favorite trends that you are seeing? I am excited to see deep rich colors making their way into wedding cake trends, specifically black cakes, which used to be unheard of. Natural elements like marble, metals, and geodes are still hot too!
What advice would you give to a younger you? If I could give my young self some advice it would be to learn how to say no. I think, in the beginning, I tried really hard to please everyone and take any order that came my way. I eventually realized that I was an impossible task and really needed to do what was best for me and my company. Learning to say no is a difficult process, but it’s a necessary skill in order to be successful!
What makes you excited to go to work in the morning? My passion lies in the creative process that I use in designing and implementing the techniques in order to create a design. I enjoy the process of looking at inspiration and figuring out a way to combine different elements together into one cohesive design as well as trying to recreate that vision with sugar in the studio. I love playing with different mediums to create a new technique or styles of decorating to fit the needs of the cake designs.
What is your favorite cocktail, or what are you drinking tonight? It’s so hard to pick just one style of drink because I really enjoy trying new things, but I tend to lean towards fruity drinks or a nice sweet glass of Moscato.
