What trends are you most excited to see this summer?
Every year it seems that more clients are selecting cake designs and flavors that are particularly custom to their special day, and abundantly detailed as well. This is something I happen to love because that’s our specialty! We have clients who want designs truly unique to them, and flavors that lend a sense of place to the cake, as well as have personal meanings. Cake isn’t just an afterthought or something to have at your wedding out of tradition anymore- it carries more weight now. As a cake artist, I am very pleased by this!
What are your favorite summer flavors?
One of my favorite summer flavors is our Colorado Peach Cake. It’s a tender yellow butter cake studded with summer peaches and swirled with a toasted pecan frangipane. Then we layer it with our own Western Slope peach preserves and a vanilla whiskey buttercream made from Stranahan’s Colorado Whiskey. Each summer, despite being peak wedding season, we load up on pounds and pounds of Palisade peaches to make our own peach preserves.
What is your dream summer cake?
My dream summer cake at the moment would be our Chocolate Huckleberry Cake. I envision an alluring dark slice of it paired with artisan gelato on lovely curated dessert plates. Perhaps we’d do something a little more bold for the exterior- rather than keeping the cake white or cream, we’d tie in muted color to keep the cake distinctive yet timeless. And of course I would have to add a little soft texture!

What trends are you excited to see this summer for cakes?
I absolutely love watercolor inspired designs. Especially if it’s a painted floral motif. They’re soft, romantic, and epitomize summer. Since these cakes are hand painted each is unique and can be customized to match your theme and color palate. The end result? A cake that’s almost too pretty to eat!
What are your favorite summer flavors?
I love lemon curd. It’s light, fruity and tart – the perfect for harmony for summer wedding cakes. My favorite lemon curd flavors are orange blossom special which is vanilla cake with lemon curd and orange blossom buttercream. Another great one is strawberry lemonade with lemon poppy seed cake, lemon curd, and strawberry buttercream. Delicious!
What is your idea of a dream project?
For me a dream project is having the opportunity to create an out of the box design. Nothing makes me happier than to be asked to make something that is completely unique and tailored to a specific couple or event.
Amazingly, I get to live another aspect of my dream project regularly – I work alongside absolutely fabulous and incredibly talented vendors who are passionate about their job, creative, who are just a pleasure to work and grow with! It’s both fun and challenging working with vendors who are some of the best in the industry, and I feel that it really elevates everyone’s output. I’m honored to say that I’ve developed personal friendships with many of these vendors, and we love working together to make bridal dreams come true!
